Greek Yogurt Chicken Salad Sandwich


This recipe is SO good, and the fact it's healthy makes it that much better! I'm not sure why I've never made my own chicken salad before, but after making this, I'll definitely be making it more often.

Greek Yogurt Chicken Salad Sandwich 
Yields 4 servings

Ingredients 

1 pound cooked chicken breast, shredded 
1/2 cup diced red onion
1/2 cup diced apple 
2/3 cup grapes, halved 
1/3 cup dried cranberries
1/4 cup sliced almonds
1/2 cup plain Greek yogurt 
1 tbsp freshly squeezed lemon juice 
1/2 tsp garlic powder 
Salt and pepper to taste
4 rolls ciabatta bread, halved and toasted (or any other bread you wish) 

Directions

In a large bowl, combine all ingredients and serve on bread.
