Healthy No Bake Oatmeal Snack Bars

I've seen recipes floating around Pinterest for homemade granola bars, and with the fact I'm about to have a baby any day now, I got motivated to make something healthy and easy to grab and eat with one hand.

I didn't go off one particular recipe this time, but decided to just have fun with it and see how it turned out. Thankfully, it worked! :) These can be modified in so many ways, and made with less or more ingredients of your choice. I will definitely be making these again, and will probably change up the flavors I include to have a few different varieties of bars to choose from.

For these bars, I've listed the ingredients I used, but again, have fun with it and get a little creative. 

They took all of about 5 min. to whip together. Quick, convenient & healthy! Just how I like it. :) 


No Bake Oatmeal Snack Bars 
2 cups oats
1/2 cup flaxseed (SO good for you & you can't even taste it in this recipe - perfect!) 
1/2 cup coconut flakes
1/4 tsp salt
3/4 cup creamy peanut butter
1/4 cup organic agave nectar or honey 
1/4 cup chocolate chips
1/3 cup dried cranberries
1/2 cup sliced almonds, chopped
1/2 cup walnuts, chopped 

Directions
1. Combine all ingredients except peanut butter and honey. 
2. Heat peanut butter and honey just until warm and liquified. Pour onto oat mixture and combine. 
3. Fold in chocolate chips until incorporated. 
4. Press into a baking pan and chill until it holds its shape, or place in the freezer for 5-10 min. Slice and serve! 

Note: The first time I made these, I spread them onto the pan too thin. They crumbled a bit when I started slicing for us to eat. I recommend making them a little thicker so they hold together better. 

My family and I enjoyed these as an afternoon snack, especially my toddler. Nutritious AND delicious!?   I'd say this recipe is a winner. :)
