Creamy Tomato Tortellini Soup

Creamy Tomato Tortellini Soup 
Adapted from Tasty Kitchen

2 large cloves of garlic, minced
2 tbsp. olive oil
2 cans condensed tomato soup (10 3/4 oz. each)
2 tbsp. tomato paste
2 cups half and half
2 cups low sodium chicken stock
1 tsp. onion powder
1 tbsp. Italian seasoning
1/2 tsp. salt
1/2 tsp. white pepper
1 package of cheese-filled tortellini (9 oz.)
Shredded Parmesan cheese, for garnish

1. In a large pot, sauté garlic with the olive oil, over medium heat until golden brown (about 2-3 min.)
2. When the garlic is done, add tomato soup, tomato paste, half and half, chick stock and spices. Bring to a boil.
3. Drop in tortellini and cook according to the package directions (typically between 7-9 min.).
4. After the pasta is cooked, ladle soup into bowls and add parmesan cheese as a garnish.

* The second time I made this, we added cooked shrimp. It was SO good!
