My Favorite Homemade Buttermilk Pancakes

Buttermilk Pancakes 
Yields approx. 12-15 pancakes

3 cups all-purpose flour
3 tbsp sugar
3 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
1 tbsp vanilla extract

*NOTE: If you do not have buttermilk on hand, you can substitute with other ingredients. My go-to is 1/4 cup milk and 3/4 cup plain yogurt. If you using the substitute for this recipe, you'll need to do that about 3x to make 3 cups worth of 'buttermilk'. You can find other substitutes for buttermilk online as well. Buttermilk does make a difference in how fluffy your pancakes will be though, so if you plan ahead before making these, I recommend getting real buttermilk! :)

1. In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
2. In a separate bowl, beat together buttermilk, milk, eggs, butter and vanilla extract.
3. Right before you are ready to cook the pancakes, combine the wet ingredients with the dry ingredients until just blended. Do not over stir; you want the batter to be thick and slightly lumpy.
4. Heat a lightly oiled griddle or frying pan over medium-high heat. Scoop the batter using approx. 1/4 - 1/2 cup for each pancake. Brown on both sides and serve!
