Incredibly Moist Banana Cake with Vanilla Bean Frosting

I saw a picture of this cake on Pinterest, and since I had more bananas than I knew what to do with, I didn't hesitate to make this. Between making my son healthy banana peanut butter oat cookies and banana oatmeal muffins, I had plenty of bananas to go around. This cake is a breeze to make, especially in my food processor, and only takes 20-25 min. to bake! Simple and delicious; what more can you ask for?! :)

Cake Ingredients 
2/3 cup sugar
1/2 cup sour cream
1 egg
2 tbsp unsalted butter, softened
2 super ripe bananas, mashed
1 tsp pure vanilla extract
1 cup flour
1/4 tsp salt
1/2 tsp baking soda

Frosting Ingredients 
2 tbsp unsalted butter, softened
1/4 cup heavy cream
1/2 tsp vanilla extract
1 1/4 cups powdered sugar

Cake Instructions
1. Preheat oven to 375° (350° if using a glass pan)
2. Cream together sugar, sour cream, egg and 2 tbsp softened butter
3. Add mashed bananas and 1 tsp vanilla extract
4. Add flour, salt, baking soda and mix will
5. Pour into a greased 8x8 pan and bake for 20-25 minutes. Allow to cool completely before frosting

Frosting Instructions
1. Cream butter and powdered sugar together until smooth
2. Slowly add heavy cream and stir until smooth
3. Stir in vanilla extract until fully incorporated
4. Spread onto cooled cake

Note: I made the frosting first and placed it in the refrigerator while the cake baked. I waited until the cake completely cooled to put the frosting on. And I may have tasted the frosting a couple times during the process. Couldn't resist! It's a-m-a-z-i-n-g. :)
