Zucchini, Carrot & Apple Muffins

I made this a couple months ago, after my dear friend Sara gave birth to her second son. I wanted to take her things that were healthy and easy to grab with one hand to eat, in the midst of caring for a newborn and an active toddler. She loved them, but I think her husband ate more of them than she did! :) I made half a batch without nuts, and the second half with chopped walnuts. I saved just 2 for my husband and me to try, and now I can't wait to make more for my household! These are a great snack, and perfect for my toddler son as well. Since I just happened to have some leftover cream cheese frosting from a different recipe, I decided to spread a little on top of one. It tasted like carrot cake. Mmm!

Zucchini, Carrot & Apple Muffins 
Yields approx. 22 muffins 

3 cups flour
1 1/8 cups sugar (or honey for a healthier version)
2 1/2 tsp cinnamon
2 1/4 tsp baking soda
1 tsp salt
3/4 tsp baking powder
4 large eggs
1/2 cup + 1 tbsp vegetable oil
1 tbsp vanilla
3 cups peeled carrots
2 cups unpeeled zucchini
2 cups apples, grated
*optional 3/4 cup walnuts, chopped

1. Preheat over to 400° F and spray muffin tins with non-stick spray
2. In a large mixing bowl, whisk together flour, sugar, cinnamon, baking soda, salt and baking powder.
3. In a medium size bowl, whisk together eggs, oil and vanilla. Add grated carrots, zucchini and apples. Stir together until fruit and vegetables are mixed well.
4. Pour liquid ingredients into dry ingredients. Fold until well incorporated. If adding nuts, fold in last. The batter should be very thick.
5. Scoop the batter into greased muffin pan. Fill almost to the top.
6. Bake 10-12 minutes. Insert a toothpick in the center. If it comes out clean it's done.
7. Let the muffins sit for about 10 minutes, then loosen edges with a small spatula or butter knife. Remove from pan to cool.
