Peanut Butter Banana Oatmeal Bars

1 1/2 cups quick cooking oats
1/4 cup packed light brown sugar (substitute honey for healthier option)
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla extract
1/2 cup milk (or almond milk)
1 egg, lightly beaten
2 medium mashed bananas
1/4 cup creamy peanut butter

1. Preheat oven to 350° F
2. Combine oats, brown sugar, baking powder, salt and cinnamon
3. Mix in vanilla, milk and egg
4. Add mashed bananas and peanut butter
5. After all ingredients are mixed together, pour into a lightly greased 8x8 inch baking pan (I used a 9x13 inch pan because I added another banana and some extra oats. Baked for 16-18 min.).
6. Bake for 20 minutes
7. Allow to cool and then cut into squares
