Healthy Banana Oatmeal Muffins

I was in charge of snack for my son's toddler class today, so last night I whipped these up. Great healthy snack for the kiddos, and the mamas liked them too! :)


Banana Oatmeal Muffins

Ingredients:
2 1/2 cups old-fashioned oats
1 cup plain, low fat Greek yogurt
2 eggs
1/4 cup honey
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla extract
2-3 bananas

Directions:
1. Preheat oven to 400° F. Spray muffin pan with non-stick spray (the paper liners don't work well with this recipe, since it doesn't contain flour).
2. Place all ingredients, except oats, into a blender or food processor. Mix slightly.
3. Add in the oats 1/2 cup at a time, until smooth (you may need to stir the mixture a few times to get them well blended)
4. Divide batter evenly among the muffin tin and bake for 20 minutes, or until a toothpick comes out clean.
