Crock Pot Stuffed Peppers

Crock Pot Stuffed Peppers


2 lbs ground pork (or a combination of pork and beef )
4 large green peppers
1 large onion
2 carrots
4 cloves garlic
1/2 head of cauliflower
6 oz can tomato paste
1 tbsp dried oregano
1 tbsp dried or fresh tarragon
Salt and pepper to taste


1. Cut the tops off the peppers and clean the seeds out 
2. Arrange peppers in the crock pot, standing up 
3. Chop onion, carrots, garlic and cauliflower in a food processor
4. In a large bowl, combine ground pork, veggies, seasonings and tomato paste. 
5. Add salt and pepper to taste. 
6. Stuff the peppers with the mixture and arrange leftover meat between the peppers. Add half a cup of water or vegetable stock, cover and cook on low for 8-10 hours. 

If you don't have a slow-cooker, this dish can be cooked in the oven, covered, for 1-2 hours.

Notes: I used turkey meat instead of pork or beef. However, next time I won't do that. We just didn't prefer the taste in this particular recipe. You can use whichever meat you prefer, but the cooking time will vary. For example, using the turkey meat in mine meant it definitely didn't need to cook for 8-10 hours. I didn't know that, so my peppers ended up being pretty soggy. :/ Next time I know to cook it for less time. You want the peppers to hold their shape. 

This recipe can be altered many ways, ingredients changed, etc. It's completely up to you. I ended up using 1/2 a head of cauliflower, since it's not my hubby's favorite flavor. Next time I may choose completely different ingredients. There are many recipes for stuffed peppers out there.

Also, I would highly recommend adding brown rice or quinoa to give this recipe more "oomph". It will also make it more filling as a complete meal.
