Crock Pot Pulled Pork Sandwiches

I've been wanting to have a go at making pulled pork sandwiches, but just hadn't gotten around to it. There's really no good reason, since I have a crock pot and they're SO easy to make! But yet it still took me until July 4th this year to make them for the first time. Thanks to a recommendation from my sister-in-law, I used Dr. Pepper instead of Diet Pepsi, like another recipe calls for. 

These sandwiches were a HUGE hit in my house, and I already have more pork stocked up in my freezer to make them again very soon. Definitely a great go-to option for when you have company over, or want to get out for the day and don't want to have to rush home to make dinner. 

BBQ Pulled Pork Sandwiches 

Pork butt, pork round or pork shoulder (I used 2.5 lbs, but you can use whatever size you want)
1 can Dr. Pepper (I ended up using a bottle, which was 20 fl oz)
1/2 bottle Sweet Baby Ray's Barbecue Sauce
Lawry's Seasoning Salt

1. Generously coat pork with seasoning salt
2. Place in crock pot and pour in soda and bbq sauce
3. Cover and cook on low for 4-5 hours (if you have a larger piece of meat, it will probably take longer)
4. After about 4 hours, take two forks and shred the meat into bite-size chunks. Let it sit in the juice to soak up the flavor for approx. one more hour.

It can stay on warm in the crock pot while serving, and can easily be reheated the next day for leftovers.

Serve on any type of roll or bun (I prefer whole wheat or the buns from Costco that look like mini flatbread).

Add more bbq sauce if desired.
