Cinnamon Sugar Muffins

My husband needed me to make something for his work's Christmas potluck and it was a last-minute request. I didn't have time to make a meal (since I hadn't been food shopping recently), so I decided to hop on good ole Pinterest to see what I may be able to whip up with what I had at home already. I saw the picture for these bad boys and away I went.

Disclaimer: The recipe claims these are for "muffins", but they most definitely taste like donuts the second you bite into them! OMG they are so delicious! They remind me of apple donuts from Apple Hill . When we lived in CA, Apple Hill was a seasonal destination we would go to for a day full of fun and activities (mainly eating). They have all kinds of desserts and treats made with apples! To me, they're best known for their apple donuts, and this was the closest I could get to making some of my own... in muffin form of course. :) 

Cinnamon Sugar Muffins

1 3/4 cup all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/3 cup vegetable oil
3/4 cup granulated sugar
1 egg
3/4 cup milk (I used what I had in the fridge, which was 1%)

Cinnamon Sugar Topping: 
1/4 cup butter melted
1/3 cup granulated sugar
1 tbs. cinnamon

Preheat oven to 350°.

Whisk together flour, baking powder, salt, nutmeg and cinnamon.

In a separate bowl, combine oil, sugar, egg and milk.

Add dry ingredients, and stir only to combine.

Coat your muffin pan well with nonstick cooking spray, and divide the batter evenly among the cups.

Bake for 15-20 minutes.

Run a knife around the sides of the muffin pan, and take them out of the pan while still hot.

For the topping, melt butter in a separate bowl. Then combine sugar and cinnamon in another bowl. Dip the muffins in butter, then into the sugar/cinnamon mix.

Let cool, eat and enjoy!
