Pumpkin Granola



Fall is my absolute favorite time of year! I love to bake and have my house fill with all the scents that come with this beautiful season. Apple, spices, pumpkin.... I love it all! I have been enjoying this granola so much. I like to have it dry, as a snack, or pour some unsweetened almond milk over it and eat it as a cereal in the morning. You can also use it as a topping for yogurt (use non-dairy yogurt if keeping it dairy-free). I hope you enjoy this as much as I have been!

* I plan to make several mason jars of these with custom labels/tags, as a gift for friends around Thanksgiving. Just an idea for you!

Pumpkin Granola (gluten-free, dairy-free, refined sugar-free)

Ingredients:
1 cup almond meal
1 cup gluten-free oats
1½ cup sliced almonds
1½ cup coconut flakes, coarsely chopped
1 cup pumpkin seeds
1 cup pecans, chopped
1 cup dried cranberries (unsweetened)
½ cup Medjool dates, coarsely chopped
½ cup coconut oil
2 Tbsp pure maple syrup (optional)
½ cup pumpkin puree
1/2 tsp vanilla extract
1 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp all-spice

Instructions:
1. Preheat the oven to 275 F and line a baking sheet with parchment paper or foil.
2. In a very large bowl combine coconut flakes, almond flour, oats, dates, cranberries, pumpkin seeds, sliced almonds and pecans.
3. In a small bowl, combine the coconut oil, pumpkin, maple syrup, vanilla extract and spices.
4. Add the wet ingredients to the dry ingredients and stir until dry ingredients are thoroughly coated.
5. Spread the granola in a thin layer on the baking sheet.
6. Cook for one hour, stirring every 15 minutes to prevent burning.

Home Office

I am SO excited to show you my new office space! Living in a house full of boys, I don't have too many places to add a feminine touch. Once we decided to make our guest room into our older son's room, I staked my claim on his old room. Thankfully, my husband complied without a whimper. :) 

Since I operate my own business from home, I really wanted a space that was bright, feminine and inspiring. This room gets great natural light, but I also wanted to add lots of white, since most of the furniture in our home is espresso colored. The pink and gold accents are my favorite part, since this room is as girly as any place in my house will ever get. :)

Little Traveler Baby Shower

My dear friend, Ashley, just gave birth to her son, Mykah. Ashley has a heart of gold, and I was honored to throw her a baby shower. She worked with Global Passion for years, leading trips to different states and countries to serve others. Her passion for others inspires me, and when planning her baby shower, I knew a "travel" theme would be perfect. I know she and her husband desire to do more traveling and missions over the years, and also share that passion with their son as he grows.

Below you will see some pictures from the shower, as well as an index at the bottom of my post, listing where I got the items we used for decor. I'm so happy with how it all came together. And more importantly, the new mommy was blessed and loved it.

Little Man Mustache Baby Shower

I recently had the privilege of throwing my friend Amber a baby shower. It was so fun to celebrate the upcoming arrival of her baby boy, Kingston! She sent me a picture of a cute Little Man sign, with the colors she plans to use in his nursery, and I went from there. It was so much fun to put together, and I can't wait to see some of the adorable decorations set up in his room!
